Our computational platform analyses the hidden fingerprints that define the structures, dynamics and functions of proteins. Exploring the whole genome from different plant species we have created a unique database containing novel proteins that could potentially become powerful ingredients.
1. Technological sense
We combine the AI’s strengths and bioinformatics to recreate how proteins are involved in modulating flavors perception. In this way we produce hundred of peptidic structures with desirable properties.

In silico protein candidates are tested in the laboratory to explore flavor diversities.
